Mediterranean diced salad

  • 1 19-oz. can of chickpeas (also called garbanzo beans)
  • 1 red pepper, seeded and diced into half-inch squares
  • 1 cucumber, chopped
  • 2 stalks celery, chopped
  • 1 c. grape tomatoes, halved
  • Juice of one large lemon (about ¼ c.)
  • 1 T. white vinegar
  • 2 T. olive oil
  • ½ c. chopped fresh parsley

Drain and rinse chickpeas and put in a large mixing bowl. Add red pepper, cucumber, celery and tomatoes to bowl. 

In a measuring cup or small bowl, whisk lemon juice, vinegar and olive oil. Pour over salad ingredients. Toss well to coat all ingredients. Add parsley and mix again. Refrigerate until ready to serve.

Season to taste.

Yields 6 servings.
